It’s getting really hot here in Jamaica! This evening I’m sharing a recipe for a tasty summer treat by Eat Good for Life. The perfect summer snack that is sure to cool you down! It’s the strawberry and apricot popsicle! Of course these fruits can be substituted for other tropical fruits such as; mango, pineapple, banana, orange, melon, etc. It is healthier and better economic alternative to make your posicles at home with fresh fruit than to buy them at the shop! STRAWBERRY APRICOT POPSICLES
Miryam’s original recipe
YIELD: 12 POPSICLES
TOTAL TIME: 10 MINUTES
- 1 lb fresh strawberries
- 1 lb apricots
- 2 tbs Truvia Nectar, or honey
Place apricots in the blender with 1 tablespoon of nectar and pulse until pureed. Fill each popsicle mold to the top and place popsicle sticks on each and freeze for at least 4-6 hrs.
