Featured: Eat Good For Life, Kale Goat Cheese Pizza

Hi everyone! Today I stumbled upon this amazing food blog on Instagram account called Eat Good For Life (@eatgoodforlife), and I was very impressed. This yummy Kale Goat Pizza dish is just one of the many amazing, creative dishes that stood out to me initially, and as a loyal foodie, I couldn’t help but repost! Lol. As I continued to scroll through the feed, my eyes were full! So many awesome food ideas, so many recipes! I went further and checked out their site and it’s simply ah-mazing! Yes, I wish I could pull everything out of the screen right and eat it right now! Okay, maybe not. Lol. The name says it all though, there are lots of cool, healthy recipes and fantastic photographs too! Excellent for those of us who prefer a clean, healthy diet, like me! The name of the clinical dietitian behind Eat Good for Life goes by Miryam. Trust me, her creative food posts will blow you away and inspire you to cook and consume healthier foods for a happier life. Her recipes are definitely #AbenahAdelaide approved! I decided to share her Kale Goat Cheese Pizza since this is the first healthy pizza that caught my eye on her feed. KALE GOAT CHEESE PIZZA
Miryam’s original recipe

YIELD: 12 SLICES TOTAL TIME: 25 MINUTES
INGREDIENTS:
3 cups fresh kale, chopped
5 oz goat cheese
2-3 tomatoes, quartered
2 lbs mozzarella cheese, shredded
2 prepared whole wheat pizza dough, or store bought
1 lb tomato sauce, any favorite kind
DIRECTIONS:
Preheat your oven to 400F.

On a flat surface, like your kitchen counter, place some whole wheat flour to prevent the dough from sticking. Roll out your pizza dough with a rolling pin in a rectangular shape and place the pizza dough onto the the rectangular baking cookie sheet making sure you reach the edges. My cookie sheet dimensions were 16.5 x 11.38 x 1 inches. Repeat this with the second pizza dough.

Divide the sauce among the two pizzas making sure to spread the sauce to the edges. Divide the shredded mozzarella cheese between the two pizzas and top with the chopped kale and tomatoes followed by the goat cheese.

Bake the pizzas in the preheated oven for 16-18 minutes. When baked, top the pizzas with some chopped red pepper flakes if desired.
